You remember from science class.  Changes in states of matter.  Ice to water to steam.  
Somehow in the freezer, ice cubes and ice cream get past the liquid state. 

We use sublimation for several reasons but mainly to make things in full color. 
Above we had a name badge.  
We print the image reversed with special paper and ink, then put the white badge blank over the print. 
They go into a heat press that (through sublimation) drives the ink from the paper into the badge surface.
You can see the indented outline of the badge and the faded ink.
